Parmesan chicken is well known to my family and we love it, but like this, covered with Mozzarella cheese and tomato sauce is far more attractive and tasteful. When we talk about melted cheese, Mozzarella is the best. There is so many recipes with chicken breast and no matter what ingredients I prepare cheese is always welcome. It gives it’s own flavor to boost up the meal I am preparing.
I have made chicken breast with mayonnaise in the oven Baked Parmesan Chicken and another one prepared with butter Crispy Parmesan Chicken Breast baked in skillet. This one is different ’cause the breasts are dipped in whisked egg white before the bread crumbs coating. So, the choice is yours… Mayo, butter or egg whites…
Oven Baked Parmesan Chicken Covered with MozzarellaPRINT RECIPE
- 2 chicken breasts
- 1/2 cup Italian seasoned breadcrumbs
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 eggwhites
- 4 ounces Mozzarella cheese
- 1/2 cup tomato sauce
- chopped fresh basil
Preheat the oven to 400 F degrees. Cut the chicken breast in 4 pieces. Whisk the egg whites in a bowl until lightly foamy and dip the chicken breast pieces in it. Combine the bread crumbs with Italian seasoned bread crumbs, grated Parmesan, garlic powder and pepper and coat every piece of chicken breast. Make sure that every piece gets a lot of bread crumbs Parmesan mixture. Put the chicken breast pieces in the pan covered with baking paper. Lightly spray with oil and bake for 20 minutes. Cover every piece with a slice of Mozzarella cheese and put it back into the oven for a few minutes more until the cheese is melted. Spread the tomato sauce over the cheese and sprinkle with chopped fresh basil. Garnish with steamed broccoli.
