Easy and Tasty Carrot Cake
Ingredients
- 1 cup all-purpose flour
- 1 cup grated carrots about 2 medium carrots
- 1/2 cup granulated sugar
- 1/2 cup brown sugar packed
- 1/2 cup vegetable oil or olive oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 4 oz cream cheese softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract for frosting
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. In a large bowl, whisk together the granulated sugar, brown sugar, and olive oil until combined. Add the eggs and 1 teaspoon of vanilla extract to the sugar mixture, and beat until smooth. In a separate bowl, combine the flour, baking powder, baking soda, ground cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the grated carrots until evenly distributed in the batter. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. While the cake cools, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese with a hand mixer until smooth. Add the powdered sugar and the remaining 1 teaspoon of vanilla extract to the cream cheese, and mix until creamy and well combined.
