Easy Apple Pie with Cinnamon
Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter chilled and diced
- 1/4 cup ice water
- 4 medium apples peeled, cored, and sliced
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- Pinch of salt
- 1 tablespoon olive oil for greasing

- In a large bowl, combine the flour and salt. Add the diced butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes. Preheat your oven to 425°F (220°C).In a separate bowl, toss the sliced apples with granulated sugar, cinnamon, lemon juice, and a pinch of salt until well coated. Remove one dough disc from the refrigerator and roll it out on a floured surface to fit a 9-inch pie pan. Place the rolled dough in the pie pan and trim the excess edges. Fill the pie crust with the apple mixture, spreading it evenly. Remove the second dough disc from the refrigerator and roll it out. Place it over the apple filling, sealing the edges by crimping them together. Cut a few slits in the top crust to allow steam to escape. Brush the top crust lightly with olive oil to help it brown.
