A tasteful chicken with pesto and mozzarella cheese garnished with seasonal salad. It can be prepared quickly and easily. Imagine all that cheese melting…awesome :-).
Some friends were coming over and I decided to prepare dinner. It was short notice so all I could find was the chicken in the freezer, some pesto and a lot of mozzarella. Believe me, my friends were thrilled with the meal I have prepared. I had to give them the recipe and some leftovers to take home. That was a success for the cook… for me :-). This dinner was joyful for me…I can call it Joy Chicken :-).
Pesto Hasselback Chicken

Ingredients
- 2 chicken breasts
- 2 tbsp pesto
- 4 oz. mozzarella
- salt and pepper
Instructions
- Preheat the oven to 350 F degrees. Make slits in the chicken breast, carefully, not to cut all the way through. Make a cut about every 1/4 inch. Season it with salt and pepper. Spread some pesto down each cut and insert a slice of Mozzarella cheese. Bake the chicken for 30 minutes and serve it with seasonal salad .
