- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar packed
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter melted
- 1 cup cherry preserves
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup sliced almonds optional
Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan or line it with parchment paper.In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt.Pour in the melted butter and vanilla extract, and mix until the dry ingredients are fully incorporated and crumbly.Press half of the oat mixture into the bottom of the prepared baking pan to form an even layer.Spread the cherry preserves evenly over the oat mixture in the pan.Sprinkle the remaining oat mixture over the cherry preserves, and if desired, top with sliced almonds for added crunch.Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.Remove from the oven and allow to cool in the pan before cutting into bars.Serve and enjoy your delicious Cherry Crunch Bars!
