Mini Apple Pie Cookies

Ingredients

  • 1 package Puff Pastry
  • 1 can Apple Pie filling
  • 1 egg
  • 1 tbsp cinnamon
  • 2 tbsp confectioners sugar

Instructions

  • Preheat the oven to 350 F degrees. Roll out the dough as thin as possible – it will at least double it’s size while baking. Divide it in half. Pour the apple pie filling on the one half and spread it evenly. Cut strips of the other half of the puff pastry dough. Make them narrow. Arrange them across pie and cut out cookies with round cookie cutter. Carefully transfer the cookies on non stick baking paper. Brush a little egg on the strips and bake for 20-25 minutes.
    I have baked all those leftovers too. Not very pretty but tasteful.
    If you have a lot of apples, you can prepare your own apple pie filling by cutting small pieces of apple, pouring sugar and vanilla in it and simmering it over the medium heat for a 15 minutes. Apple pie filling has to be cold when comes in touch with the dough.
